Solar recipe: summer fruit compote with vanilla
After a sunny day, there’s nothing like refreshing yourself with a fruit compote, served with a scoop of vanilla ice cream. It’s a dessert to look forward to, and will cost you next to nothing if the fruit comes from the garden.

Ingredients for 8 people
- 1.5 kg apples, pears, apricots, peaches, plums, cherries
- 200 g light cane sugar
- 1 vanilla pod
Preparation of the vanilla summer fruit compote
- Wash the fruit. For apples and pears, peel, core and dice. For apricots, peaches, etc., cut them in half and remove the stones.
- Place them in the tube(s) with the sugar and vanilla.
- Bake for 40 minutes. Then remove the rack and pour the excess juice into a bowl. Continue cooking if necessary.
- Pour the compote into a shallow dish to cool. Serve chilled with cookies.
