Solar recipe: blackberry muffins
Late August is the height of blackberry season, and the sun is always shining brightly at this time of year! A good reason to make muffins, to devour for breakfast or a snack.
Recipe suggested by : Linda Louis – Solar box oven (SunTaste) or solar tube oven (SunGood XL, SunChef) – Preparation time: 30 mn – Cooking time: 1h30
Ingredients for 8-10 muffins
- 240 g flour
- 120 g light cane sugar
- 3 c. to c. baking powder
- 1 good pinch of salt
- 2 eggs
- 1 plain yoghurt
- 100 ml sunflower oil (or melted butter)
- 250 g blackberries (or blueberries or raspberries)
Preparing the blackberry muffins
- Preheat the solar cooker.
- Mix all the dry ingredients in a bowl.
- Then, in another, all the liquid ingredients. Then add the blackberries to the mixture.
- Pour the liquid mixture all at once over the dry ingredients and stir with a wooden spoon. Do not smooth the dough, as it should remain grainy.
- Grease 8-10 muffin tins and fill almost to the brim with batter. Arrange them in a black dish
- Bake for 45/50 min in a box oven (between 110 and 130°C) or 30/35 minutes in a tube oven (between 150 and 200°C).
